Tom Clancy's Rainbow Six Siege is a tactical first person shooter, the PlayStation 5 and Xbox Series S/X version of the game do have offline training/Terrorist hunt modes, You can not choose your map/mode to play however as it randomly assigns these, however you can choose from all of the operators, and their attachments/gear is unlocked for offline play.
